The outside of the fish should be shiny, even, and metallic. The gills should be a vibrant red, and the flesh should have a deep, rich color.

Storing Cod

Cod can be stored in the fridge and freezer. As it has a very low fat content Cod doesn’t spoil as fast. The prime indicator of rot in fish is the odor. Fresh fish can have clean water or salty smell. If the aroma is pungent or strong, it is a sign that the fish has gone past its cooking point. Store Cod in the fridge in an airtight container. For the freezer, either wrap the packaging in heavy-duty foil or place in a ziplock bag with some water, making sure to remove as much air from the bag as possible.
