Purchasing Cod

If you have the chance to touch the fish, there are two important things to pay attention to. The feel of the fish should be slimy like it was just plucked from the water. Pressing the flesh should not leave a depression in the fish, and the flesh should rise back to its original height. If you see a thumb-shaped groove after removing your hand, the fish is no good. The outside of the fish should be shiny, even, and metallic. The gills should be a vibrant red, and the flesh should have a deep, rich color.

Fresh fish can have clean water or salty smell. If the aroma is pungent or strong, it is a sign that the fish has gone past its cooking point. Store Cod in the fridge in an airtight container. For the freezer, either wrap the packaging in heavy-duty foil or place in a ziplock bag with some water, making sure to remove as much air from the bag as possible.

How to Handle Cod

Frozen pieces of fish should be thawed at room temperature. In case there are ice crystals on top of the fish, rinse the fish under tap water and dry with paper towels. The use of heat to defrost or thaw fish will cause it to start cooking and ruin the taste. As the application of heat won’t be even part of the fish will be overcooked while the other side remains raw.
